..while all necessary organs, like the skin are already decomposed. what make it well preserved?

Decomposing is done by germs. Hair and bones contain no liquids, so microbes find it very frozen to grow in them, and they do not perish. Even sugar will not be eaten by microbes because of this reason, so it can hold for years.
