My roomate told me I shouldn't drink water I've left out overnight. Does anything grow?

Well, when I was taking Microbiology, I performed tests on tap water, bottled water, and water from a dog's bowl. My classmates dog was very dirty, slobbered often, and my classmate never cleaned his bowl. (outdoor dog). Results= Just fine on all three. The dog water was cleaner than the tap water. I wouldn't worry too much about the water being left overnight. Bacteria has to have an optimal temperature to grow and a place where they can feed off nutrients. Water doesn't have all the necessary nutrients they need to sustain life. I think you'll be okay, and I would just recommend not drinking any water left in the bathroom overnight. Hehe. You shouldn't drink anything that you have left out overnight. Bacteria in the glass or bottle can cause you to be ill.
Nothing does not grow in water if you leave it out overnight. I drink water I leave out overnight all the time and I feel the same when I drink it. So you are alright, but try to avoid it if you leave it out 4 to 5 nights then listen to your roommate.
If you look closely you will see pieces of dust floating on the top after leaving it out for a night or two.

it's possible that after opening a bottle of water, when you put the cap back on the bottle it traps all the bacterias from your mouth.
