Antinutrients are substances that interfere directly with the absorption of vitamins, minerals and other nutrients.
Phytate occurs in several plant groups, particularly grains and also the pulses. These are known to chelate, that is, combine with and remove, valuable minerals such as calcium and magnesium and trace elements such as zinc, copper and iron, which are vital for health.

There are more antinutrients in veg diet than in non-veg diet.In fact, heavy reliance on grains and legumes can be problematic. These have anti-nutrients which made them unsuitable for our Paleolithic ancestors to eat. Eventually humans discovered how to tolerate these grains by grinding and cooking them, which ended the Paleolithic era. But because we can tolerate them does not mean they are necessarily good for us, and their intake has resulted in another increased prevalence has been cited as a cause of increases in chronic diseases such as food intolerances & auto-immune diseases.
