Actually, the routine might not have to be all that much different from your football routine- just don't go nuts on the weights. The best thing to do would be to do strength training 4-6 days a week, but keep the load light and she only needs to spend 10-20 minutes each of those days. She could do the routines at home, no need for a gym membership even.
Concentrate on the areas that need work- presumably her belly, thights, glutes. Crunches, leg raises, ab/adductor and glute extension exercises could do wonders even within a week or two.
There are a lot of books for this around with sample routines. The gym usually has the big Nautilus machines, but also some smaller freeweights and dumbells. She'll see a ton more in the way of benefits if she sticks to freeweights, so generally avoid the big machines. Keep the weights on the lighter side, but still do a steady slow increase. She won't bulk up if she does this.
The body fat will be best gotten rid of by lots of cardio. The weight training will tone her a ton more, and probably make her feel a lot healthier and better about her body, but she should probably do a little bit of both when she can handle it.
But also: don't be too hard on her! Help her, don't boss her around.
