I got my wisdom teeth out the other week, and I was knocked out completely. If your girlfriend's going to be sedated, than she won't remember anything from the operation. All she'll remember is getting the IV inserted into her arm and than waking up after the doctor is finished. Afterwards, there will probably be some swelling and she'll have to keep cotton in her mouth to prevent excessive bleeding. I'd have jello and puddings on hand for her to eat for the first couple of days.
I don't know if the dentist will actually let you sit in on the proceedure. When someone tried to sit in on mine, they wouldn't let them. I'd be sure to check with the dentist before the proceedure, especially if your girlfriend's relying on you being there - that way she won't have her hopes up for nothing.
But, if they do let you sit in on it, I'd expect a lot of blood. You might not be able to see very much, since everyone will be working inside of the mouth.

Are her wisdom teeth still embedded or already out? That makes a big difference in what they will be doing.
Also, will she be sedated or fully conscious? That also makes a big difference.
What she should expect:
Any good doctor will numb her mouth so she feels nothing. She shouldn't be scared.
She won't be able to eat steak for a couple weeks. Make sure she has broth and popsicles to eat.
Her mouth will swell up, but she can reduce swelling by putting ice on it.
Her dentist really should have went over all of this with her.
What you should expect:
You probably won't see much. The dentist is there to do his job and he needs to see inside her mouth, there won't be much room for you to see exactly what he's doing.
Have you talked to the dentist? Are you allowed to watch? I would definately run this by him so it's not a surprise the day it happens.
You sound like a very kind boyfriend though. Even if you don't learn much about dentistry, you're bound to make your girlfriend very happy. Props to you.
